The ultimate guilt-free "cheese!" You can add this tasty cashew cheese to pastas, avocado toast, our cauliflower pizza or you can jut eat it straight out of the jar by the spoonfuls. To put it simply, this is a big staple in our kitchen and we highly recommend you give this creamy pleasure a go!
1 cup raw cashews
2 cups filtered water
1/2 teaspoon unrefined sea salt (celtic salt if available)
2 tablespoon lemon juice
2 teaspoon unrefined sea salt (celtic salt if available)
1.5 tablespoon extra virgin olive oil
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon chopped rosemary
1. Soak the cashews, 2 cups filtered water, and 1/2 teaspoon sea salt in a covered container at room temperature overnight or for a minimum of 4 hours.
2. Strain the cashews from the water and add to a blender or food processor.
3. Add all other ingredients and blend until a smooth and creamy, ricotta like texture.
4. Taste test and add more of desired ingredients until tastes to your preference.
