If you love Lara Bars, you will love these chocolate energy bars! These have been a go-to of mine for quite sometime now and I think they'll quickly become a favorite of yours too. These delicious bars take less than 10 minutes to prep and are a wonderful energizing snack to have mid-day. I invite you to be creative with these. If you are missing one of the nuts or seeds, add a different kind instead. These are really flexible, which is what I love most about them. Enjoy, beautiful!
30 medjool dates
1/4 cup raw almonds
1/4 cup raw cashews
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1/4 shredded coconut
4-5 tablespoons raw cacao powder
1 tablespoon chia seeds
1 tablespoon unrefined coconut oil
sprinkle of cinnamon (optional)
pinch of raw sea salt (optional)
Place all ingredients except the sea salt into a food processor.
Mix well, but maintain some crunch by leaving small pieces of nuts and seeds.
Line a tray with parchments paper and evenly spread mixture onto tray.
Sprinkle the mixture with cinnamon and raw sea salt (optional)
Place tray in refrigerator for 12-24 hours.
Cut mixture into bars and store in the refrigerator with parchment paper between each bar.
