When I think of winter and comfort food, cauliflower is the first thing to pop into my mind: cauliflower pizza, cauliflower mashed "potatoes" and now coconut curry cauliflower.
This is one of those perfect dishes to throw in on a cool, cozy night. Which for me, is exactly what tonight is!! Plus, cauliflower is loaded with Vitamin C, making this dish a powerful immunity booster. Give this simple recipe a try, because boy oh boy does this hit the spot!
1 head or 24 ounces of cauliflower
5 tablespoons melted coconut oil
1 tablespoon curry powder
1/2 teaspoon ginger powder
1/2 celtic sea salt
1/4 teaspoon turmeric
dash black pepper
Preheat oven to 400 degrees farenheit.
Line baking sheet with parchment paper or aluminum foil.
Cut cauliflower head into florets.
Place florets onto baking sheet.
In a small bowl, mix together the melted coconut oil and seasonings.
Brush the toppings onto the florets.
Bake for 30 minutes or until golden brown.
