Mexican food isn't always the healthiest, especially when dining out, but it doesn't have to be that way. You can enjoy your favorite Mexican flavors and not feel guilty about it! . Fresh and delicious, this recipe is the perfect option to satisfy your cravings for Mexican food.
Corn tortillas (watch out and make sure there is no added wheat)
1 can of vegetarian refried beans (See recipe below to make your own)
Optional: 20 oz. Ground Turkey, ¼ Onion, 1 clove of garlic, 1 pinch of Sea Salt
Pre-heat the oven for 425.
Brush or lightly spread coconut oil on each side of the corn tortilla.
Place on a baking sheet lined with foil
Bake on 425 for 5 minutes
Flip the tortillas over and cook for another 5 minutes
Sauté onion and garlic in a medium sized skillet until onions are clear
Add a pinch of salt
Add ground turkey and sauté until brown
Spread beans on the top of the tortilla
Optional Add Turkey
Add guacamole to the top
3 cups of dry beans
4-5 cloves of garlic chopped
¼ of a cup of onion
¼ tablespoon of salt
Rinse beans and soak beans overnight in water (6+ hours)
In a large pot, sauté chopped garlic and onion in 2 tablespoons of olive oil
Drain beans and add to pot
Add two inches of water above beans
Cover and bring beans to boil
Reduce heat to low cook for about 3 hours or until beans are soft
Mash beans with a potato masher
For our Paleo friends: Cook two slices of bacon in a skillet and add the drippings to the beans.
