Do you love Pesto sauce but can't do dairy? Or do you want something you can put on pretty much anything? Here is a solution! This might be one of my favorite recipes, personally, I love this on eggs, lasagna, chicken, zucchini noodles, the list goes on! You feel like you're indulging, but you're totally not! Enjoy! xo
½ cup of cashews
3-4 cups of fresh basil
1/2 cup of olive oil
½ teaspoon of salt
2-3 cloves of garlic
Optional (lemon juice to taste).
Add cashews to food processor and finely chop until it appears the consistency of grated Parmesan cheese. Add basil and chop until you no longer see leaves. Add olive oil, salt, and garlic and chop until consistency is that of pesto sauce. (I always add salt to taste!)
