Sweet potatoes are literally life-savers! They are packed with anti-oxidants + anti-inflammatory goodness, and let's not forget they are fantastic blood sugar regulators. One cup of sweet potato pumps your body with all the vitamin A your body could ask for in a day. Vitamin A is an anti-oxidant boosting vitamin and is responsible for strengthening your immune system. The best part? This highly fibrous brownie slowly infiltrates the body, giving you lasting energy + longer term satisfaction.
2 medium to large sweet potatoes
1 cup raw cacao powder
2/3 cup ground pecans
1/2 cup coconut flour (or flour of choice)
1/4 cup coconut oil
14 pitted medjool dates
5 tablespoons brown rice syrup
1 teaspoon baking soda
1 pinch of sea salt
Preheat oven to 400F.
Wash + scrub the skin of the sweet potatoes.
Slice sweet potatoes into medium sized discs. ( Skins can stay on.)
Lather discs in coconut oil + place on a lined baking sheet.
Bake for 20-25 minutes or until soft.
Once finished, set the oven to 350F.
In a large mixing bowl, combine all ingredients except for sweet potatoes + dates.
In a food processor add the pitted dates + baked sweet potatoes.
Once thoroughly combined, add in the rest of the ingredients from the mixing bowl.
Add the brownie mix into a lined baking dish.
Bake for 20-25 minutes.
Once finished baking, let sit until completely cooled.
