The smells and tastes of fall have overtaken my kitchen. I can't get enough of the invigorating smells of cinnamon, clove + nutmeg! These delightful + nostalgic tasting Pumpkin Pie Bites are perfect to keep in the freezer for an after dinner or anytime treat. As an added bonus, pumpkin is packed with vitamin C, making it a rich detoxifier, immune booster + antioxidant. I hope these Pumpkin Pie Bites make you feel cozy this season!
1 cup pumpkin puree
1/4 cup coconut oil
1/4 cup raw unsalted almond butter
4 tablespoons brown rice syrup
1 teaspoon pumpkin pie spice
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon finely ground celtic sea salt
Mix all of the ingredients together in a bowl until smooth + creamy.
Line a loaf pan with parchment paper so it extends up the walls.
Pour mixture into loaf pan.
Freeze for a minimum of 5 hours or for best results, over-night.
Take the pumpkin pie out of the freezer and top with chocolate fudge.
Place back into freezer for 10 minutes
Take out, cut into small cubes & enjoy!
Chocolate Fudge Topping
1 tablespoon raw cacao (unprocessed chocolate) powder
1 tablespoon coconut oil
2 tablespoons brown rice syrup
Mix all ingredients in a bowl until smooth + creamy.
